Homemade Smokey Tomato Baked Beans
These beans are rich and delicious and a perfect way to mix up the breakfast menu with something savoury. To level up your beans, pop them into a baking dish and then crack a few eggs on top and bake for 15 minutes.
Homemade Smokey Baked Beans
Ingredients
- 2 x cans of cannellini beans
- 1 x red capsicum
- 1 x onion diced
- 1 tsp of olive oil
- 1 tbs minced garlic
- 1 tbs smoked paprika
- 140g small can of tomato paste
- 1 x 400g can diced tomatoes
- 2 x date or prunes diced (optional)
- 1 apple (grated, or cooked and mashed)
- 1 tbs apple cider vinegar
- 1 tbs Dijon mustard
- Good crack of pepper
- ¼ tsp of cinnamon
- Optional: sprinkle of cayenne pepper
Directions
- Add your olive oil, garlic, onion and capsicum to your pot and cook until softening.
- Add in your paprika and stir for 1-2 mins before adding in everything else.
- Cook for 15-20 minutes
